2018 Adelaide Hills Cabernet Sauvignon
The grapes for this wine come from our north facing Razorback Road vineyard, in the southern Adelaide Hills. The 2018 vintage was an especially warm and early vintage, and this allowed our cool climate vineyard to fully ripen the albeit very low crop of Cabernet Sauvignon in 2018. The small bunches were crushed and destemmed to traditional small open concrete fermenters. Following fermentation the wine was pressed to new and old French oak barrels, where it matured for 12 months.
Deep red colour, the nose shows lifted Cabernet aromas of cassis, dried herbs and a hint of mint along with subtle sweet oak notes. The palate displays ripe, cool climate Cabernet flavours of blackcurrant and dried herbs and with subtle sweet oak flavours. Medium bodied yet with good concentration of flavour, this wine is well supported with fine grained tannins which give the wine structure and length. Whilst approachable now this wine will reward medium term cellaring of 5 to 10 years.
