2004 Shiraz/Cabernet Sauvignon Tasting Notes----
In its youth this wine did not often employ its “inside voice.” it boasted bright red/black fruits, white peppery spice, anise and eucalyptus. The use of French and American oak gifted texture, structure and authority.
On its journey toward seniority, this wine has matured into a considered, patient and indulgent table mate. The bright red/black fruits have deepened; welcoming coffee and earthy truffle. the spices have softened and blended seamlessly with the floral and vanilla notes from the time in barrels and two decades of peaceful slumber in the bottle.
Once decanted, this wine will be a delight when served with game meats such as duck or kangaroo, any rich tomato-based Italian cuisine and quality salted dark chocolate.
2006 Shiraz/Cabernet Sauvignon Tasting Notes----
2006 was a year of challenges in the Adelaide Hills, unexpected rains and an especially cruel frost conspired to keep harvest yields low. However, the fruit that fought through was of an exceptionally high quality.
When this wine was young, The palate was rich with blackberry, dark cherry and black olive.
Today we present this wine as a testament to patient and thoughtful cellaring. The fruits have evolved into the deepest crimson and cardinal. Our signature blend of spice, acid and oak has manifested into a wine of presence and pleasure.
When paired with lamb shanks, beef spareribs or earthy roasted mushrooms this wine will elevate any dining experience.
2010 Shiraz/Cabernet Sauvignon Tasting Notes----
2010 was one of the very few years when all the viticultural gods smiled upon us; warm when we prayed for warmth, and the rains fell as soon as we asked nicely.
This led to a vintage of exceptional natural acidity and depth of primary fruits. This harmony is best expressed in this wine’s exceptional tannin structure; fine and velvety but with no shortage of star power.
The elements that made this wine stand apart in its youth have only enhanced its appeal now. the now ruby garnet fruits, white pepper, anise spice and the luscious natural acidity beguile. The tannins enrobe and the aromas bewitch.
This wine will show a treat should you open a bottle at a table bearing roast beef short rib, Irish stew or shepherd's pie.
